Scallops and shrimp steel cut oat congee is a delicious and comforting oatmeal porridge dish that's easy to make. Here's a simple recipe you can follow:

Ingredients:

  • 1/2 cup Oct meal
  • 2 cups chicken broth
  • 1/2 lb shrimp, peeled and deveined
  • 5 dried scallops ( soak until soft and save for the water for broth)
  • 1 inch piece of ginger, peeled and minced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Green onions, sliced for garnish
  • Sesame oil for drizzling

Instructions:

  1. Heat the vegetable oil in a large pot or dutch oven over medium heat. Add the ginger and garlic and sauté until fragrant, about 1 minute.
  2. Add the oatmeal to the pot and stir to coat with the ginger and garlic.
  3. Pour in the chicken broth and scallop water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for about 30-40 minutes, stirring occasionally, until the rice has completely broken down and the mixture has thickened into a porridge.
  4. Add the shrimp and scallops to the porridge and stir to combine. Cook for about 10 minutes, until the seafood is cooked through.
  5. Season the congee with salt and pepper to taste.
  6. Ladle the congee into bowls and garnish with sliced green onions. Drizzle with sesame oil before serving.
