How to prepare dried shiitake mushrooms
Cover the mushrooms in boiling water. Soak for 20 minutes. The mushrooms should double in size.
Strain the liquid and use it in stocks, congee, and soups.
Discard the stems – they're too tough to eat. Slice the mushrooms and add to stir-fries, soups, and curries.

Soak dried mushrooms in water for 30 minutes, or until they are soft. Finely chop the mushrooms. Place in a pot with the soaking water. Gently bring to boil. Simmer for 15 minutes. Add soy sauce toward the end or add miso when it is warm not simmering.
