Chinese style elephant fish, dried scallop winter melon soup is a popular dish in Chinese cuisine. Here's a recipe to make this delicious soup:
Ingredients:
- elephant fish fin ( a replacement for shark fin) (about 250g)
- 4 dried scallops
- 4 medium size Japanese Mushroom
- 1 winter melon (about 500g)
- 1/2 Organic chicken
- 3 slice of ginger
- 6 cups of water
- Salt to taste
- 1 tablespoon of cooking oil
- Coriander leaves for garnishing
Instructions:
- Blench the chicken for 5 minutes, drain and set aside.
- Soak the dried scallops and dried mushroom in water for 30 minutes until they become soft.
- Boil 6 cups of water and add the cleaned chicken
- Clean the elephant fish fin
- Peel the winter melon and remove the seeds. Cut the melon into bite-sized pieces.
- Heat the cooking oil in a pot and sauté the ginger until fragrant.
- Add the dried scallops and stir-fry for 1 minute.
- Add the elephant fish fin and continue to stir-fry for 2 minutes.
- Add the winter melon and stir-fry for 1 minute.
- Add all the ingredients to the chicken soup
- Reduce the heat to low and let it simmer for 1 hour.
- Add salt to taste.
- Garnish with coriander leaves and serve hot.
