Elephant Fish Fin Winter Melon Soup

Chinese style elephant fish, dried scallop winter melon soup is a popular dish in Chinese cuisine. Here's a recipe to make this delicious soup:

Ingredients:

  • elephant fish fin ( a replacement for shark fin) (about 250g)
  • 4 dried scallops
  • 4 medium size Japanese Mushroom
  • 1 winter melon (about 500g)
  • 1/2 Organic chicken
  • 3 slice of ginger
  • 6 cups of water
  • Salt to taste
  • 1 tablespoon of cooking oil
  • Coriander leaves for garnishing

Instructions:

  1. Blench the chicken for 5 minutes, drain and set aside.
  2. Soak the dried scallops and dried mushroom in water for 30 minutes until they become soft.
  3. Boil 6 cups of water and add the cleaned chicken
  4. Clean the elephant fish fin
  5. Peel the winter melon and remove the seeds. Cut the melon into bite-sized pieces.
  6. Heat the cooking oil in a pot and sauté the ginger until fragrant.
  7. Add the dried scallops and stir-fry for 1 minute.
  8. Add the elephant fish fin and continue to stir-fry for 2 minutes.
  9. Add the winter melon and stir-fry for 1 minute.
  10. Add all the ingredients to the chicken soup
  11. Reduce the heat to low and let it simmer for 1 hour.
  12. Add salt to taste.
  13. Garnish with coriander leaves and serve hot.
