Here's a recipe for Sea Cucumber and Morel Mushroom Stewed Pork Meat Soup:

Ingredients:

  • 200g sea cucumber
  • 100g morel mushrooms
  • 300g lean pork meat, thinly sliced
  • 1 piece of ginger, sliced
  • 4-5 cloves of garlic, minced
  • 1 tablespoon cooking oil
  • 1 tablespoon Shaoxing wine (Chinese rice wine)
  • 1 liter chicken or pork broth
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions:

  1. Prepare the sea cucumber: Soak the sea cucumber in cold water overnight to soften it. Rinse thoroughly and cut it into small pieces.

  2. Prepare the morel mushrooms: If using dried morel mushrooms, soak them in hot water for about 30 minutes until they become soft. If using fresh morels, simply clean them and slice them into smaller pieces.

  3. Heat the cooking oil in a large pot or Dutch oven over medium heat. Add the minced garlic and sliced ginger, and sauté until fragrant.

  4. Add the sliced pork meat to the pot and cook until it turns slightly browned.

  5. Pour in the Shaoxing wine and stir briefly to deglaze the pot.

  6. Add the sea cucumber and morel mushrooms to the pot, and give everything a good stir.

  7. Pour in the chicken or pork broth, Stir to combine all the ingredients.

  8. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 1 hour, or until the pork is tender and the sea cucumber has softened.

  9. Season with salt and pepper to taste. Adjust the seasoning according to your preference.

  10. Once the soup is ready, garnish with chopped green onions and serve hot.

Note: You can also add other vegetables like bok choy or carrots to the soup for added flavor and nutrition.
